Dorm Dash - Pumpkin Pie in a Mug

It’s getting to be that time of year, good food all around. Not every student goes home for the holiday season for whatever reason, so it’s great to have something to make in your dorm! Here is an easy recipe to make and the only main things you need are a mug and a microwave (minus the ingredients of course).

Ingredients

  • 1 Teaspoon Unsalted Butter

  • 14 Grams of Gingersnaps (which is about two small cookies)

  • ⅓ cup of Pumpkin Puree

  • 1 Large Egg

  • 1 Tablespoon of Milk

  • 2 Tablespoons of Brown Sugar

  • 1 Teaspoon of Pumpkin Pie Spice

How to Make

  1. Melt your butter in the microwave til it gets all melted.

  2. Crush your gingersnaps into crumbs and mix in with the butter. Push it tightly into the bottom of the mug to have a makeshift pie crust at the bottom.

  3. In a small bowl, mix the puree, the egg, milk or an alternative, brown sugar and the pumpkin pie spice.

  4. Pour the mix into the mug with the makeshift crust.

  5. Put the mug in the microwave to begin heating. Start off with two minutes and stick with a knife. If it doesn’t come out clean or clean-ish, put it back in for thirty-second increments until it comes out right. Make sure to not cook it for over five minutes, however.

  6. Enjoy!
