Dorm Dash: Chicken, Vegetable and Rice Casserole

Are you looking for a delicious casserole to make in your dorm? This one is an amazing recipe to try out and you are free to substitute some pieces depending on dietary restrictions! This casserole is perfect for this coming winter weather for a delicious treat after a long day. There is this perfect mix of the ingredients in the end that bring this creamy feeling to your mouth which makes this a favorite.

Ingredients

-        Frozen Vegetables (or you can provide your own vegetables for this)

-        Chunk Chicken or Rotisserie Chicken

-        2 Cups of Rice

-        Ritz Crackers Pack

-        2 cans of Cream of Chicken

-        4 Tablespoons of Butter

-        1 Cups of Chicken Broth

You Will Also Need

-        A Large Casserole Dish

-        Pots that you can use to boil rice and vegetables

-        A Strainer

-        Small Plastic Bag

Steps

1.     Preheat the oven to 375

2.     Boil the rice till finished (may depend on the rice you use)

3.     Boil Vegetables till they are cooked thoroughly (also depends on how you do it and the type you go with) Be sure to not overcook them, so they hold their shape in the casserole.

4.     Mix the chicken broth with the cream of chicken in a pan and warm up to mix well. If you want to make this dish a bit cheesy this is where you would want to add cheese to thicken this up as a sauce for the casserole.

5.     Melt butter in the microwave or in a pan.

6.     Put Ritz crackers in a small plastic bag and crush them inside.

7.     Combine the butter with the crackers INSIDE the plastic bag. Smooth it out from outside the bag to let the butter mix with the crushed crackers. This will be a topping for the casserole to provide a crunchy top.

8.     Pour boiled rice in the casserole dish (or a mixing bowl if you want to mix it first), followed by the chunk chicken OR rotisserie chicken (after pulling it apart of course). From there add in the vegetables and the sauce and mix together well. In the end, pour the buttered crackers on top and spread them around.

9.     For even cooking, place some aluminum foil over the casserole before placing it in the oven.

10.  Put the casserole in the oven and wait 30 minutes. After, take off the foil and put it back in for 10-15 more minutes until the crackers are golden in color.

11.  Let cool before serving.
