Recipe: Hearty and for the heart, vegetable beef soup

It’s cold. I’m bitter. You know what makes me not bitter? Soup.

Here’s a recipe to make the cold days not seem so bad.

Ingredients:

[NOTE: You use what vegetables, you like! No rules here, but here’s what I like in my soup]

-1/4 cup of olive oil

-1 yellow onion, diced

-1 stalk of celery diced

-3 cloves of garlic minced (but measure garlic with your heart)

-2 large potatoes peeled and diced

-1 can of each of the following: corn, peas, stewed tomatoes (again, add what veggies you like!)

-2 lbs of ground beef

-4/5 cups of beef broth (you could also use vegetable broth)

-2/3 cups of tomato juice

-salt and pepper to taste

First in a large pot add your olive oil, ground beef, and onion on medium to high heat. Brown your beef then add in your onion, celery, and garlic.

Once you can smell the garlic and the onion add in all your vegetables, tomato juice and beef broth.

Bring it all to a boil then bring down the heat to medium-low and simmer for about 45 minutes.

From here add salt and pepper to taste and enjoy!
